Shepherd’s Pie

 

Healthy Ingredients

Canola oil spray

1 pound of 95% fat free ground beef

1 cup of chopped onion

16 ounces of frozen mixed vegetables

2 cups of diced Roma tomatoes

4 russet potatoes, quartered and boiled until soft

½ cup of skim milk

2/3 cup of reduced fat shredded Mexican style cheese

¼ teaspoon of ground white pepper

½ teaspoon of ground black pepper

1 ½ teaspoon of salt

  • Makes 4 servings

 

Cheat Meal Ingredients

4 teaspoons of canola oil

1 pound of 80% fat free ground beef

1 cup of chopped onion

16 ounces of frozen mixed vegetables

2 cups of diced Roma tomatoes

4 russet potatoes, quartered and boiled until soft

¼ cup of 2% milk

1/8 cup of melted butter

1 cup of freshly grated cheddar cheese

¼ teaspoon of ground white pepper

½ teaspoon of ground black pepper

1 ½ teaspoon of salt

 

Directions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Heat a skillet to on medium and add oil. Brown the ground beef, breaking it into small pieces as it cooks. Add onions, tomatoes, frozen mixed vegetables, ¼ teaspoon of white pepper, ¼ teaspoon of black pepper, and 1 teaspoon of salt. Cook for 5 minutes.
  3. Mash potatoes with milk (and butter for cheat meals,) ½ teaspoon of salt, and ¼ teaspoon of black pepper.
  4. Move meat and vegetable mixture to an oven-safe casserole dish. Cover with potatoes. Top with cheese. Bake 10-15 minutes until cheese is browned and bubbling.
  5. Cut into four equal parts. Scoop and serve.
